Australian Eucalyptus Blossom

In the meadery's early years. I was sourcing a beautiful Eucalyptus honey from a beekeeper down in Ventura County. The mead I produced from this honey was light, refreshing and hugely popular. To my dismay, the prolonged drought at the turn of the millenium dried up that honey source and my only recourse was to source Eucalyptus honey from Australia. I parked two barrels of that honey in my honey room and basically forgot about it for 20 years. But honey never spoils, so we brewed up our first batch of Australian Eucalyptus Blossom mead this winter and here it comes! Like its California counterpart, this varietal is bright, light and refreshing, with a subtly herbaceous Champagne character, notes of leche and green strawberry and a dry straw and maple finish. This mead would pair superbly with sushi or raw oysters.
