Nigerian Casearia Blossom varietal. This honey originates from the southwest of the country, near the border with Benin. The honey is favored for its prominent notes of butterscotch and indeed that quality does come through in the mead, but in a uniquely briny and savory manner. There are also subtle notes of wood and smoke but the mead finishes cleanly. I would pair this with an herbed soft cheese on rye crackers.
